Oolong tea

Oolong tea belongs to the semi-fermented tea, the manufacturing method of oolong is a combination of production advantages of green tea and black tea. It has a taste of the vibrant of green tea and the mellow of black tea. It was fisted produced in Wuyi Mountain in later Ming and early Qing Dynasty.

The steps of procedure of oolong tea are withering, making fixation, stirring fixation, rolling, drying up. Among those steps, making fixation is the key process of forming specific quality characteristics of oolong tea, it is also the basement to establish the fragrance and taste of the oolong. After withering, the tea leaves are put in a rocking machine and shake, leaves touch each other and bruise leaf cells then contributing to promoting activity of the enzyme, tea also has series of biochemical changing.

There are various oolong teas according to different producing places. The color of soup turns from light yellow to beautiful orange and salmon pink. The greener the dry tea is the lighter the fermented the tea is.  Whereas, the darker the tea is the darker the liquid is.

Oolong belongs to the semi-fermented tea, and it is particular with its picking. Because the degree of oolong tea fermentation is about 20 percent, so it remains the green tea’s sweet and fragrant fresh. An appropriated degree of fermentation can give it the strong fragrance of black tea. Having combine the two, oolong has more preference.
