The overview of Da Hong Pao Oolong Tea:

Da Hong Pao Oolong Tea is a very important Wuyi Oolong tea. Legend has it that the mother of a Ming Dynasty emperor was cured of an illness by a certain tea, and that emperor sent great big red robes to clothe the four bushes from which that tea originated.

Three of these original bushes, growing on a rock on Mount Wuyi and reportedly dating to the Song Dynasty, still survive today and are highly venerated. At one point, less than one kilogram of tea was harvested from these plants each year, of which a portion was retained by the Chinese government.

In 2005, the remainder of this original and real Da Hong Pao was auctioned, with an initial asking price of 4000 RMB/100 g, but often reaching millions of dollars per kilogram. Cuttings taken from the original plants have been used to produce similar grades of tea from genetically identical plants(grown in their place of origin). Taste variations produced by processing, differences in the soil, and location of these later generation plants is used to grade the quality of various Da Hong Pao.

All Da hong pao tea are fermented in the way as below:

The fresh leaf is firstly dried in the sun to kill the natural green enzymes off. The leaves are then processed in a repeated series of heating, drying, and rolling, until the final shape is achieved and the leaves are baked over a wood fire until crisp.

Premium Da Hong Pao Oolong Tea:
This premium da hong pao are well processed and of high grades. Taste like Fresh roasted strong black coffee, with a tobacco-like edge. (In a rich and dark warm liquid). smooth and earthy with slightly sweet, fruity aftertaste. Try it as your Saturday morning brunch tea, it has a nice astringent taste, with a tiny sweet note to the finish. A good one.

Brew guide:
Gaiwan or Yixing pot (120cc): 5-7grams Premium Da Hong Pao Oolong Tea per time (based on personal taste), Brew it with hot water(over 98C or 209 F). steep for 15-20s for the first and second brewing. It can be brewed between 6 to 8 times.
